Our BI development is just getting off of the ground.  Before we get too many SSIS packages, we'd like to start a logical method for documenting the SSIS packages.

Obviously, we will need to document the business requirements and the package design.

How about for documenting the internals of the package (i.e. data sources)?  Has anyone used BI Documenter (Pragmatic Works) or SQL Server Metadata Toolkit (CodePlex)?

Mike, thanks for the link.  We have started following the practices outlined in that blog article.

Does anyone recommend any tools for gathering and storing package component information?

BI Documenter is great for documenting packages and anything in SQL server.
